 Chrysanthemum Fish Fillet Soup

Main Ingredients: 100g chrysanthemum, 300g grass carp fillet.

Additional Ingredients: 50g shiitake mushrooms.

Seasonings: Ginger, scallions, cooking wine, salt (all in appropriate amounts).

Instructions:
1. Pick the chrysanthemum petals, soak them in water, and drain. Cut the fish fillet into 3cm square pieces. Slice the ginger, cut the scallions into sections, and slice the shiitake mushrooms.

2. Add clear broth to a soup pot, add ginger and scallions, cover and bring to a boil. Add the fish fillets and shiitake mushrooms, and a little cooking wine. Once the fish fillets are cooked, remove the shiitake mushrooms, scallions, and ginger. Add the chrysanthemum and salt to taste.


◆ Grass Carp with Tofu

Main Ingredients: 100g cleaned grass carp fillet, 100g tofu, 10g peas, 10g bamboo shoots.

Seasonings: Vegetable oil, salt, MSG, chopped green onion, minced ginger, chicken broth, and cooking wine, all in appropriate amounts. Instructions:

1. Debone the grass carp and cut into small cubes; cut tofu into small cubes; wash bamboo shoots and slice thinly; wash peas and cook until tender.

2. Heat vegetable oil in a wok over high heat until it reaches 80% of its smoking point, then add the grass carp cubes and fry until golden brown.

3. Add cooking wine, chopped green onion, minced ginger, and salt to the wok and stir-fry.

4. Pour chicken broth into the wok, add bamboo shoots and tofu, cover, reduce heat to low, and simmer for about 3 minutes.

5. Increase heat to high and reduce the sauce until thickened. Add peas and MSG to the wok, stir well, and serve.


Crucian Carp

**Also known as:** River crucian carp, crucian carp seed, baby crucian carp.

**Properties and Channels:** Sweet in taste, neutral in nature; enters the spleen, stomach, and large intestine channels.

Recommended serving size: Approximately 100 grams per serving.

Nutritional Components: Protein, carbohydrates, vitamin A, vitamin B₁, vitamin B₂, vitamin B₁₂, niacin, thiamine, riboflavin, phosphorus, calcium, iron, etc.

Remedies:

3. Chronic Gastritis: Cook 1-2 crucian carp and 50g glutinous rice together into porridge. Consume regularly morning and evening.

 Steamed Crucian Carp with Black Fungus
Main Ingredients: 100g black fungus, crucian carp
Seasonings: Cooking wine, salt, sugar, ginger, scallions, vegetable oil (appropriate amounts).

Instructions:
1. Remove gills, internal organs, and scales from the crucian carp and rinse thoroughly. Soak the black fungus, remove impurities, wash, and tear into small pieces. Wash and slice the ginger. Wash and cut the scallions into sections.

2. Place the crucian carp in a large bowl, add ginger slices, scallion sections, cooking wine, sugar, vegetable oil, and salt, and marinate for half an hour.

3. Place the chopped black fungus on top of the crucian carp and steam for 20 minutes.


Stewed Crucian Carp with Black Beans
Main Ingredients: 1 crucian carp.

Additional Ingredients: 50g black beans, 10g scallions, 10g ginger. Seasonings: 5g salt, 6g chicken powder, 3g pepper powder, appropriate amount of chicken broth.

Instructions:
1. Clean and prepare the crucian carp. Soak the black beans in water until softened.

2. Place a pot on the stove, add the crucian carp, chicken broth, black beans, scallions, ginger, salt, chicken powder, and pepper powder. Simmer over low heat for 20 minutes until the crucian carp is tender and the broth is thick and white.
