1. Braised Three-Yellow Chicken with White Sauce
Ingredients: 1 young three-yellow chicken, 50g chopped scallions, 20g ginger slices, 25ml Shaoxing wine, 100ml soy sauce, 10g sugar, 3g MSG, 5ml sesame oil, 5g cilantro.

Preparation Method:
① After slaughtering and cleaning, soak the chicken in cold water for 2-3 hours. Bring a large pot of water to a boil at 7K. Hold the chicken by the head and neck and immerse it completely in the boiling water for 10-20 seconds. Remove it from the water and wait for the broth to boil again. Repeat this process for 3-4 seconds to ensure even heating without breaking the skin.

② Rinse the chicken skin with cold water to remove any blood foam. Skim off any remaining foam from the broth. Place the chicken back in the pot with ginger slices, Shaoxing wine, and enough water to cool the broth. Cover the pot and simmer over low heat for about 25 minutes, until the chicken meat is no longer bloody. Remove and soak in cold water to cool. ③ Add soy sauce to the pot, add 20 ml of chicken broth, then add sugar, MSG, cilantro, and chopped green onions. Bring to a boil, then pour into a bowl and serve with the chicken.

④ Pour the chicken broth from the soup bowl into the wok, place it over high heat, add salt, MSG, and the cooked winter melon pieces, bring to a boil, skim off the foam, simmer over low heat for 2-3 minutes, add the steamed chicken pieces, cook for a short while, sprinkle with chopped cilantro, and serve.
